I haven’t had a Fitness Friday post in a while. Mainly because I have honestly had no new or innovative ideas to share with you on fitness. During the summer, my goal is to run as late at night or early in the morning as I possibly can to avoid the scorching Texas heat (it was 100 degrees when I ran last night at 7:30). I also try to attend as many classes at my gym as I can so that I can work out without having to be sooo hot! So obviously my routine hasn’t been too exciting. However, a trainer at my gym told me about a fabulous workout that you can do anywhere-without any weights or equipment. Also, you can do the small amount of running it requires outside, or inside on the treadmill.
All you need is a deck of cards!
Hearts represent pushups, diamonds are jump lunges, spades are burpees, and clubs represent squat jumps. Jacks equal 20 reps, Queens are 30 reps, Kings are 40 reps, Aces are a 2 minute 30 second run, and the Jokers are worth 50 reps of your choice of the four different exercises. All of the other non-face cards are worth their face value. (ex: 5=5 reps, 8=8 reps, etc.)
Shuffle the cards and put them on the ground next to your workout space. Draw the top card each time, and do the workout that the number and type represent. If you go through the whole stack, your workout will be about an hour long. Believe me….this workout absolutely wears you out!
This workout is perfect for rainy, snowy, or scorching hot days when working out outdoors is not an option. It’s also perfect for times that you are out of town and can’t get to the gym!

I have seen so many people rant and rave about cauliflower pizza crust and how delicious it is. I finally decided to try it!
I used a Cauliflower pizza Crust Recipe from Eating Bird Food blog. The only thing that I changed about the recipe was to add 1 C. of parmesan cheese instead of her suggested 1 C. of mozzarella cheese.
While the cauliflower crust is baking, sauté 1/2 onion, 2 cloves of garlic, 1 C. of sliced mushrooms, and 1 bell pepper in 1 tsp. of olive oil. Cook on medium until the onions are translucent and the peppers are tender.
After removing the crust from the oven, spread any gluten free barbecue sauce of your choice onto it. Then, add enough 2% mozzarella cheese to cover the sauce. Add vegetable mixture over the cheese, and put 2 C. chopped grilled chicken on top of the veggies. Sprinkle parmesan cheese over the top if desired. Broil for 5 minutes or until cheese is melted.
I have to admit that I do not like raw cauliflower very much, so I was skeptical about the pizza crust. But, I really really liked it! The crust was soft, and had a great cheesy taste. My only complaint is that I feel that the cauliflower burns easily, hence the dark outside of my crust above. That part didn’t taste too great. I would suggest cooking your crust for a few minutes less than the recipe suggests.
It was so great to be eating healthy pizza! Who knew cauliflower could taste so yummy?!

I am always looking for new ways to cook veggies to make them more exciting and appetizing. I don’t like frozen or canned vegetables very much, so I typically only use fresh. I found some yummy looking broccolini at the grocery store and decided to buy it. Broccolini is a hybrid of broccoli and kai-lan, which is a Chinese broccoli. It has smaller florets and thinner stalks. To me, it just adds a twist to regular fresh broccoli!
First, add 1 tbsp. of butter to a saucepan on medium heat. Then, add washed broccolini to the pan. Next, add gluten free soy sauce and siracha to the pan to taste. Cook for ten minutes, and then it’s ready to eat!
This simple veggie can be added to a number of meals. I promise you will love it!
I went on a weekend vacation with my best friends to Chicago a few weeks ago! We had the BEST time. We squeezed a ton of sightseeing in during our weekend and were able to do so many fun things!
Seeing Wrigley Field was great….except the part where we had to wait four hours for the game due to the rain delay. We made the best of it and still had a blast!
Obviously we had to take selfies at the Bean in Millennium Park.
The architecture river cruise was my absolute favorite thing that we did. We were able to see the intricate buildings in Chicago and learn a little more about their history from our tour guide. I would recommend this to anyone traveling to Chicago. Oh, and there are fireworks at the end!
My trip to Chicago was filled with sightseeing, shopping, lots of good Chicago Italian food, and fun with my favorite people! I can’t wait to go back!
When I think of summer, I think of fresh berries, fruits, and vegetables. They taste so much better than produce from the store! During these few months, I normally eat much healthier because all I want are fresh veggies and fruits. When I found some farm-fresh peaches in the grocery store today, I knew that I had to make a peach cobbler out of them! I have missed out on pies and cobblers since going gluten free, but I think this peach crisp is so easy and delicious that it will become a go-to recipe each summer.
First, wash, peel and slice 6 fresh peaches. Add to a large bowl.
For the filling, add 1/4 C. packed light brown sugar, 2 tbsp. cornstarch, 1 tsp. almond extract, and 1/4 tsp. cinnamon to the bowl with the sliced peaches. Stir and set aside.
For the topping, combine 1/2 C. gluten free rolled oats, 1/3 C. packed light brown sugar, 1/4 C. almond flour, 3 tbsp. softened butter, 1 tsp. cinnamon, and 1/2 tsp. of almond extract into a separate bowl. Mix with a fork or pastry cutter.
Put peach filling into an 8 by 8 glass pan. Layer topping over it and bake at 375 degrees for 30 minutes. Enjoy!!
