Quinoa Salad

This super easy quinoa salad is perfect as a side dish or as an entire meal! It is the perfect summer dish that is light, healthy, and doesn’t require much effort.

1. Add 2 C. water and 1 C. quinoa to a boil in a saucepan. When quinoa comes to a boil, reduce heat to low and cover. Simmer for 10-15 minutes or until water is absorbed.

2. Whisk 1/4 C. olive oil, the juice of two limes, 1 tsp. of chili powder, 1 tsp. paprika, 1 tsp. salt, and 1/2 red pepper flakes together in a bowl. Set aside.

3. Combine quinoa with 1 1/2 C. halved cherry tomatoes, 8 oz. black beans (drained and rinsed), 3 chopped green onions, 1/2 c. crumbled feta cheese, and 1/4 C. chopped cilantro.

4. Pour dressing over quinoa mixture and add salt and pepper to taste. Serve immediately or chill in refrigerator.

Pink + Navy

I purchased this sleek, feminine, pink lace dress at the beginning of the summer for one of my engagement picture outfits. I wasn’t sure if I would wear it again after that, but it has become my go-to dress for the summer. The lace fabric is so light and airy, which is absolutely perfect for the scorching Texas heat.

I think my love for KIND bars began when I found one at Starbucks. I was so thrilled to find something gluten free that I could actually eat with my coffee there! I loved the fact that they were made of only natural nuts, berries, and chocolate and no weirdo ingredients. Also, they come in sooo many different flavors. I’m actually on a mission to try them all 🙂  You could imagine my delight when I found that KIND made gluten-free granola. The Oats and Honey Clusters with Coconut quickly became my all time fave, and I have been eating it ever since.

Here are a couple of recipes that I like to enjoy with my KIND granola!

Berries and Cream

This recipe is adapted from an original recipe by The Pioneer Woman, Ree Drummond.

Add 1/2 C. of plain, gluten free yogurt to 1/4 C. half and half. Stir together. Put 2 tbsp. brown sugar (or more if you like your yogurt sweeter) on top of the mixture. Do NOT stir the brown sugar in. Place in the refrigerator for 20-30 minutes. After the proper time has elapsed, stir the sugar into the yogurt. Layer yogurt mixture, fruit, and KIND Oats and Honey Clusters granola into a bowl. This is such a quick and easy breakfast or snack!

Baked Peaches

Many people assume that granola is only for breakfast. Well, I am here to tell you that it can make a fabulous dessert as well! My baked peaches are such a great healthy dessert that anyone will love!

Preheat oven to 375 degrees. In a bowl, mix 2 tbsp. of butter with 1 tsp. of cinnamon, 2 tbsp. of brown sugar, and a tsp. of pure almond extract. Mash together with a fork. Wash and halve two peaches and remove the pit. Place them face side up in an 8 by 8 baking dish. Spread the butter mixture evenly onto the peaches. Bake for 25-30 minutes.

Top baked peaches with gluten-free frozen vanilla yogurt and KIND Oats and Honey Clusters granola. It tastes just like a peach cobbler!

Cilantro Lime Rice

One of my favorite things about Chipotle is their Cilantro Lime Rice. Here is a simple version of this delicious dish that you can make at home!

Bring 2 C. of water to a boil in a saucepan. Stir in 1 tbsp. of butter and 1 C. of rice. I use Jasmine rice. It has a great texture and is one of the most healthy types of rice. It is a carbohydrate, but it can be broken down in the body more easily than most carbs. Cover the rice and reduce the heat to low. Simmer 20 minutes.

Stir in 1 tsp. of salt, 1/2 C. chopped cilantro, 1 clove of chopped garlic, 1/4 of a chopped white onion, 2 tbsp. of fresh lime juice, and 1 tsp. lime zest. Mix together and enjoy! This rice is so easy and quick!

Weekly Pinspiration-Navy Color Crush

This weekend while shopping for bridesmaid dresses with my girls, a few of the sample dresses caught my eye. They were all in navy. I do not own many navy clothes, nor do I decorate my home with navy. But I realized how classic and clean the color looks! Not to mention the fact that you can pair navy with so many coordinating colors. I am definitely inspired to decorate my new home with this timeless color after I get married! Fitness Friday

I haven’t had a Fitness Friday post in a while. Mainly because I have honestly had no new or innovative ideas to share with you on fitness. During the summer, my goal is to run as late at night or early in the morning as I possibly can to avoid the scorching Texas heat (it was 100 degrees when I ran last night at 7:30). I also try to attend as many classes at my gym as I can so that I can work out without having to be sooo hot! So obviously my routine hasn’t been too exciting. However,  a trainer at my gym told me about a fabulous workout that you can do anywhere-without any weights or equipment. Also, you can do the small amount of running it requires outside, or inside on the treadmill.


All you need is a deck of cards!

Hearts represent pushups, diamonds are jump lunges, spades are burpees, and clubs represent squat jumps. Jacks equal 20 reps, Queens are 30 reps, Kings are 40 reps, Aces are a 2 minute 30 second run, and the Jokers are worth 50 reps of your choice of the four different exercises. All of the other non-face cards are worth their face value. (ex: 5=5 reps, 8=8 reps, etc.)

Shuffle the cards and put them on the ground next to your workout space. Draw the top card each time, and do the workout that the number and type represent. If you go through the whole stack, your workout will be about an hour long. Believe me….this workout absolutely wears you out!

This workout is perfect for rainy, snowy, or scorching hot days when working out outdoors is not an option. It’s also perfect for times that you are out of town and can’t get to the gym!
