I bought an entire bag of key limes at the grocery store this past week to force me to make something that is different from my normal go-to desserts. I was craving a citrusy and creamy dessert, and was reminded of lemon bars that can be made with a gluten free Bisquick crust! I adapted the recipe from Bisquick to incorporate key limes instead of lemon. I absolutely love how the bars turned out!
First, preheat the oven to 350 degrees. Next, prepare the crust by combining 1 C. gluten free Bisquick, 1/2 C. butter (softened), and 1/4 C. of powdered sugar together until crumbly.
Press into an 8 by 8 pan and bake for 20 minutes.
After that, add 3 tbsp. of lime juice and 2 tsp. of lime zest to a bowl.
Add 1 C. granulated sugar, 1/4 tsp. of salt, 1/2 tsp. baking soda, 2 eggs, 2 tbsp. of melted butter to the lime mixture. Beat for 3 minutes, or until light and fluffy. Pour over crust and bake for 20-25 minutes.
Sprinkle extra powdered sugar on top. Yum!!!
