Gluten-Free Burrito Bowl

I love Chipotle burrito bowls! I wanted to come up with a simple, healthier version of it that I could make at home. Slow cooking the chicken in a crock pot makes this dish very easy!

First, combine two boneless, skinless chicken breasts, 2 tbsp. Siracha, half of a chopped onion, two chopped cloves of garlic, and 16 oz. of natural chicken broth into a crockpot. Cover and cook on high for two hours. Next, transfer the chicken to a cutting board and shred with two forks. Return the chicken to the crockpot and add one can of black beans, and one can of corn. Cook for 30 more minutes.

When the chicken is finished, layer brown rice, chopped cilantro, shredded romaine lettuce, the crockpot chicken with beans and corn, shredded cheese, and salsa.
